Stuffing Baby Portabella Mushrooms With 8 Ounces Crab

This recipe is all about the crab stuffing. How you make the stuffing will determine whether or not these mushrooms are low-carb/keto or paleo/whole30. We'll start with the mayo. I have talked about my distaste for mayonnaise before. It's the one ingredient that I won't eat. I didn't want to use cream cheese so I went with an avocado-oil based mayonnaise because I just happen to have an unopened jar in my frig and I'm so glad I did. This might actually make me a believer in mayonnaise again. It's also low-carb, keto, paleo, and whole30 compliant. The real difference is whether or not you use Parmesan cheese or nutritional yeast. If you are paleo/whole30 you will need to use nutritional yeast since cheese is not compliant.
What Type Of Crab To Use
I used real crab meat. Real crab meat can be expensive. I'm not going to tell you that you have to use real crab meat in this recipe. I suggest you use what fits your dietary & financial needs. If you aren't using real crab meat, other perfectly suitable substitutions include canned crab meat (drain before using), frozen crab meat (thawed before using), or even imitation crab. Don't like crab? Try subbing chopped shrimp, lobster or scallops.

What Type Of Mushrooms To Use
You have a lot of options when it comes to what mushrooms to use for this recipe. In general you will want to use 8 ounces of large mushrooms because they are easier to handle for stuffing. What you see here are large and baby portobello mushrooms. You don't have to use portobellos! Large white mushrooms are great with this recipe too. Depending on the size of mushrooms you use for this recipe, you can end up having 3 or 6 like you see here, or 12 if you use non-baby portobellos.

Preparing The Mushrooms
There are a couple steps you will need to take to prep the mushrooms before stuffing them:
- Clean them: when cleaning mushrooms, you don't wash or soak them. You clean mushrooms by wiping them with a damp paper towel.
- Remove stems & gills: I snap off the stems and use a spoon to remove the inside gills. Removing this makes a larger space so you can stuff the mushroom with as much stuffing as you can. Be careful when scooping out the gills & sides; mushrooms are fragile. If you go too hard, they will break.

WHAT IS AN AIR FRYER?
What is an air fryer exactly? The nameair fryer is a little bit confusing, because when you cook food in yourair fryer you aren't actually frying it. An air fryer cooks your food by circulating hot air around the food at a very high-speed, cooking the food and producing a crispy 'fried' layer. This is called convection so yourair fryer is actually a small countertop convection oven. An air fryer can help you cook your food faster while still getting a nice baked or fried texture on the outside, all with a very small amount of oil. Air fryers come in a variety of different sizes and styles. What you see here in the pics is a 5.8-quart air fryer.

BAKING INSTRUCTIONS
Don't have an air fryer yet? That's okay. While I do recommend getting one, you can also bake the crab stuffed mushrooms. Preheat your oven to 375°F (175°C). Spray a large baking pan with cooking spray. Add the prepared crab stuffed mushrooms and bake for approximately 18-20 minutes. How long the mushrooms take to cook will depend on their size. Bake the mushrooms until they're tender.
Notes about this recipe:
- Assemble these the night before & refrigerate them until they're ready for the air fryer or oven.
- Freeze them for later! I love prepping crab stuffed mushrooms in advance and throwing them in the freezer for potlucks or when we get hungry. They can be cooked right from frozen. If cooking from frozen, add an additional 3-5 minutes to the air fryer cook time or an additional 10 minutes for oven.
I used a 5.8-quart air fryer for this recipe.
- 8 ounces mushrooms
Stuffing:
- 8 ounces crab meat, chopped
- 2 green onions, chopped finely
- 1/4 cup mayo
- 1/3 cup Parmesan cheese OR 1/4 cup nutritional yeast
- 1 tsp parsley
- 1/4 tsp paprika
- Pinch salt & pepper
- Preheat air fryer to 380 degrees.
- Clean the mushrooms by wiping them with a damp paper towel. Snap off the stems of the mushrooms and use a spoon to remove some the inside gills.
- Spray air fryer lightly with cooking spray or line with foil.
- In a medium size bowl, mix together the stuffing ingredients.
- Stuff each mushroom evenly with the crab stuffing.
- Add the mushrooms in a single layer to the air fryer. Do not overlap. You might have to do this in batches depending on the size mushrooms you are using.
- Cook 9 minutes or until stuffing has started to brown & mushrooms are tender.
- Prep Time: 20 minutes
- Cook Time: 11 minutes
